KALE CAESAR SALAD
Ingredients:
4-5 cups shredded kale
1 can chickpeas
2 tbsp olive oil
½ tsp paprika
¼ tsp garlic powder
2 tsp salt
Parmesan cheese to garnish
DRESSING
3 cloves garlic
1 tbsp Dijon
Juice from 1 lemon
1 tbsp red wine vinegar
¼ cup olive oil
Optional - 1 tsp gf Worcestershire
Salt and (lots of) pepper Directions:

Using a handheld blender or cuisinart
Combine all ingredients for dressing until blended and thick. Add more salt or pepper to taste.
Preheat the oven to 400F - rinse chickpeas and pat dry. Place on a baking tray with parchment and season with olive oil, paprika, garlic powder and salt.
Roast for 25-30 mins until crispy. Let cool.
Massage kale leaves with caesar dressing. Top with cooked chickpeas and grated parm.
