KALE CAESAR SALAD

Ingredients:

  • 4-5 cups shredded kale

  • 1 can chickpeas 

  • 2 tbsp olive oil 

  • ½ tsp paprika 

  • ¼ tsp garlic powder 

  • 2 tsp salt 

  • Parmesan cheese to garnish 

DRESSING

  • 3 cloves garlic 

  • 1 tbsp Dijon

  • Juice from 1 lemon

  • 1 tbsp red wine vinegar 

  • ¼ cup olive oil 

    Optional - 1 tsp gf Worcestershire 

    Salt and (lots of) pepper Directions:

  1. Using a handheld blender or cuisinart 

  2. Combine all ingredients for dressing until blended and thick. Add more salt or pepper to taste.

  3. Preheat the oven to 400F - rinse chickpeas and pat dry. Place on a baking tray with parchment and season with olive oil, paprika, garlic powder and salt. 

  4. Roast for 25-30 mins until crispy. Let cool.

  5. Massage kale leaves with caesar dressing. Top with cooked chickpeas and grated parm.
