GF CINNAMON ROLLS

Ingredients:

  • 1 x 16oz bag bobs red mill bread mix (discard yeast pack) - I ordered on Amazon

  • 1/2 cup sugar

  • 4.5 tsp instant yeast (make sure it’s instant!)

  • 1.5 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp kosher salt

  • 1 1/4 cups water

  • 1/2 cup unsalted butter

  • 1 tsp apple cider vinegar

  • 1 egg + 1 egg white

  • Cornstarch

    Filling

  • 6 tbsp unsalted butter (room temp and spreadable)

  • 1/2 cup brown sugar

  • 2 tbsp cinnamon

    Icing

  • 1/4 cup unsalted butter room temp

  • 4 Oz cream cheese room temp

  • 1 cup powdered sugar

  • 2 tsp vanilla

Directions

  1. Using a stand mixer with a dough hook, mix bread flour, sugar, instant yeast, baking powder and baking soda until combined.
    Heat water, butter and vinegar for 1.5 mins until warm.

  2. On medium speed slowly pour the mixture.

  3. Once mixed add egg and egg white. Increase speed to medium-high and mix for 5 mins.

  4. Then allow dough to rest for 10 mins.

  5. Lay down plastic cling and generously dust cornstarch on top.

  6. Lay down dough and roll into 13x19.

  7. Spread butter then sprinkle with brown sugar and cinnamon. Roll dough into a log and cut into 7 equal pieces.

  8. Place in a parchment-lined 10” cast iron skillet.

  9. Preheat oven to the lowest temp possible.

  10. Once preheated, turn off and place pan in the oven for 45 mins (rolls will double in size).

  11. Heat oven to 350F then bake rolls for 25-30 mins.

  12. Combine icing ingredients - wait until rolls have cooled and then drizzle icing!
