FUNFETTI HAMENTASCHEN

Ingredients:

  • 2 cups GF Flour (I used Cup 4 Cup)

  • 3/4 cup sugar

  • 1 tsp baking powder

  • 1/2 tsp kosher salt

  • 1 egg room temp

  • 3/4 cup softened butter

  • 1 tsp vanilla

  • 1/2 cup Sprinkles

  • Nutella or Jam

Directions

  1. Preheat oven to 350F.

  2. In a bowl combine all dry ingredients.

  3. In a separate bowl combine softened butter, egg and vanilla.

  4. Add wet to dry mixture.

  5. Then add your sprinkles. Use hands to mix and form a dough.

  6. Place on some saran, wrap it into a log and place in fridge for an hour.

  7. Roll dough out evenly (about 1/4 inch thick) and using circular cookie cutters or a glass cut circles.

  8. Pinch all the edges to form a triangle and place them on a parchment lined baking try.

  9. Bake for 12-15. mins. Let cool and then fill with a teaspoon full of nutella or jam!
