DETOX BROCCOLI SOUP
Ingredients:
2 carrots - diced
2 celery ribs diced
1 small onion diced
2 cloves of garlic minced
1 large head of broccoli (or two small) cut into small florets - use the stem too!
1 zucchini diced
2 bay leaves
1/4 cup almond butter
4-5 cups veg or chicken stock
Handful of spinach
Salt and pepper to taste
Directions
In a large pot, over medium heat - add 2 tbsp olive oil. Sautée onion, carrot and celery.
Cook 2-3 mins and then add minced garlic. After 1 min add broccoli and zucchini.
Stir to combine, cook 1-2 mins and add broth and bay leaves. Bring to a boil, lower heat and cover with a lid partially.
Cook on low about 20 mins until all veg are soft. Remove bay leaves. Add spinach and almond butter.
Purée with a handheld immersion blender. Season with salt and pepper to taste.
Top soup with roasted broccoli and a drizzle of olive oil (or cheddar cheese for the kiddies ;)
