CRISPY SMASHED BRUSSELS SPROUTS
Ingredients:
2 pounds Brussels sprouts
2 tbsp olive oil
2 tbsp grated parm
2 tbsp balsamic
Salt
Directions
Preheat oven to 450F.
Boil Brussels sprouts for 10 mins.
Immediately place in ice cold water bath. Dry very well.
Place on a sprayed parchment lined baking tray and using a towel or cloth flatten with your palm nice and thin (towel will also absorb more liquid).
Toss in olive oil, salt and balsamic. Cook for 20-25 mins, flipping halfway through.
Toss with parm and cook for an additional 5 mins.
Serve on its own or drizzle with a bit more balsamic.
