CRISPY SMASHED BRUSSELS SPROUTS

Ingredients:

  • 2 pounds Brussels sprouts

  • 2 tbsp olive oil

  • 2 tbsp grated parm

  • 2 tbsp balsamic

  • Salt

    Directions

  1. Preheat oven to 450F.

  2. Boil Brussels sprouts for 10 mins.

  3. Immediately place in ice cold water bath. Dry very well.

  4. Place on a sprayed parchment lined baking tray and using a towel or cloth flatten with your palm nice and thin (towel will also absorb more liquid).

  5. Toss in olive oil, salt and balsamic. Cook for 20-25 mins, flipping halfway through.

  6. Toss with parm and cook for an additional 5 mins.

    Serve on its own or drizzle with a bit more balsamic.
