BUFFALO CAULI TACOS

Ingredients:

  • Head of cauliflower - cut in large florets

  • 1/2 cup GF flour

  • 1 tsp paprika

  • 2 tsp garlic powder

  • 1 tsp salt

  • 1/2 cup milk (I used almond but any kid. Works)

  • 1/2 cup hot sauce (I used franks red)

  • 2 tbsp melted butter

  • 2 tbsp honey

  • 1/2 juice lemon

  • Tortillas (I like @sietefoods )

  • Sliced avocado

  • Coleslaw (I used store bought)

  • Sour cream or ranch (or plain yogurt)

Directions

  1. Preheat oven to 450F

  2. Spray florets with a bit of cooking spray.

  3. Combine flour, paprika, garlic powder and salt and stir in milk - thick paste will form.

  4. Toss in cauliflower - all florets should be coated in a thin layer.

  5. Place florets individually on a parchment sprayed baking sheet (don’t dump all them on - make sure they are spaced out.)

  6. Bake for 10 mins, flip cauli, bake another 10.

  7. While they are baking, whisk hot sauce, melted butter, honey and lemon.

  8. Remove cauliflower from oven and dip each piece in sauce (coat all over - the saucier the better!). Put back in oven for 10 mins.

  9. Heat up tortillas for a few mins a side in a non stick.

  10. Add cauli and all your fave toppings and enjoy!!
