BROWNIES
Ingredients:
1 medium sweet potato - peeled, steamed and mashed
2 eggs
¾ cup almond butter
½ cup maple syrup
1 tbsp vanilla
½ cup cocoa powder
⅛ tsp baking powder
1 + ½ cups chocolate chips
Optional for topping: ½ cup chocolate chips, 1 tbsp coconut oil, maldon sea salt, powdered sugar
Directions:
Set oven to 350F
In a blender, combine all wet ingredients: sweet potato, eggs, maple syrup and almond butter.
Add cocoa powder and baking soda - blend until combined.
Stir in Chocolate chips.
Grease an 8x8 pan and add batter. Top with pieces of chocolate or more chocolate chips.
Bake for 15 minutes on a middle rack, rotate pan and bake for an additional 5-10 minutes.
It may look undercooked but it will continue cooking in the pan. Wait 30 minutes until completely cooled!
Top with your toppings of choice
Microwave ½ cup chocolate chips and 1 tbsp coconut oil for 1 minute, stir (if still need to melt - microwave chips for another minute. Drizzle on brownies and top with sprinkles)
