BROWNIES

Ingredients:

  • 1 medium sweet potato - peeled, steamed and mashed

  • 2 eggs

  • ¾  cup almond butter

  • ½  cup maple syrup

  • 1 tbsp vanilla

  • ½  cup cocoa powder

  • ⅛ tsp baking powder

  • 1 + ½ cups chocolate chips 

  • Optional for topping: ½  cup chocolate chips, 1 tbsp coconut oil, maldon sea salt, powdered sugar 

Directions:

Set oven to 350F

  1. In a blender, combine all wet ingredients: sweet potato, eggs, maple syrup and almond butter. 

  2. Add cocoa powder and baking soda - blend until combined. 

  3. Stir in Chocolate chips. 

  4. Grease an 8x8 pan and add batter. Top with pieces of chocolate or more chocolate chips. 

  5. Bake for 15 minutes on a middle rack, rotate pan and bake for an additional 5-10 minutes. 

  6. It may look undercooked but it will continue cooking in the pan. Wait 30 minutes until completely cooled! 

  7. Top with your toppings of choice

  8. Microwave ½ cup chocolate chips and 1 tbsp coconut oil for 1 minute, stir (if still need to melt - microwave chips for another minute. Drizzle on brownies and top with sprinkles)
